1. Waffle Fruit Cups: These are perfect for any summer party, and totally easy to make. Purchase the miniature waffle cones from your local grocer. Fill the with fresh fruit, I love them with cantaloupe, honey dew, water melon, blueberries and strawberries, and cool whip on the side. However if you want to give them a patriotic twist, try layering strawberries, raspberries, blueberries, and watermelon with cool whip for a fun red,white and blue treat!
2. Fire and Ice bar: A great idea I first found featured on Epicurious: If you live in a neighborhood where you can see fireworks from your yard, set up and ice cream sundae bar right before you settle in to watch the sky light up. Have tons of toppings and let everyone make their own sundaes.
3. Fourth of July Firecracker Cocktail: Remember those firecracker popsicles that we used to eat when we were kids? This cocktail is the grown-up version. It was created by The Food Network's Guy Fieri. Check out the recipe below:
Ingredients
- 1 ounce watermelon schnapps
- 1 big splash cranberry juice
- 1 very thin slice jalapeno or serrano pepper
- 1 slice lemon
- 1 slice lime
- 1 1/2 ounces tequila
- 1/4 ounce blue curacao
- 1/2 ounce simple syrup
- Watermelon wedge, for garnish (optional)
Directions
Mix the schnapps and cranberry juice in a shaker; pour into an ice-filled glass.
Muddle the jalapeno pepper, lemon and lime slices, tequila, blue curacao and simple syrup (to make a batch, dissolve sugar in equal parts hot water and chill) in the shaker. Slowly strain into the glass over the red layer. Garnish with watermelon, if desired.
